Zach Allen is front and center in the rising gourmet scene at two of Las Vegas’ most fashionable hotels. A proud protégé of Mario Batali, Zach worked his way up the rungs of the restaurant industry and is now a highly acclaimed executive chef for B&B Ristorante, Enoteca San Marco and Carnevino.
Zach had a passion for cooking at a young age and dove head first into his culinary adventures at Johnson and Wales in Rhode Island. After graduating in 1999 he put his knowledge and talent to the test with an internship at La Reserve in New York City. He proved to be both knowledge and talented under pressure and was invited to work at Lupa. After four years working under Mark Ladner at Lupa, Zach was offered the position of executive chef at Mario Batali and Joe Bastianich’s then-new Otto Enoteca Pizzeria.
Zach was an integral leader of the team who transformed Otto into a popular downtown attraction for Italian pizza lovers. Together with Mario, Zach launched Otto’s renowned artisinal salumi program, which showcases over 16 varieties of salamis and meats. In addition, as consulting salumist to all of Mario’s restaurants, he created the educational component of the salumi program, which teaches servers and staff about the complex world of curing meat.
When Mario and Joe decided to take their enterprise to Vegas, Zach was once again invited to step in as executive chef and help build and execute the menus for B&B Ristorante, Enoteca San Marco and Carnevino in Las Vegas. Each restaurant, located respectively in the Venetian Hotel Casino and the brand-new Palazzo hotel has received wonderful praise for its high quality, adventurous Italian food. Zach is best recognized for bringing his vision of sensible Italian flavors to the chic and competitive Las Vegas gourmet scene.
